Here we go; long time I didn’t post a recipe for our English speaking friends.
Serves 6-8, accompany with a fresh fruit salad and some dates
Halve 1 vanilla pod and scrape the seeds into a bowl; reserve the pod. Add 220g caster sugar, zest of 2 oranges, and 7 egg yolks. Whisk until pale and fluffy.
Place 3dl milk, 6dl double cream, vanilla pod and 1 cinnamon stick in a saucepan and simmer gently for 5 minutes.
Slowly strain the hot liquid into the egg mixture, whisking constantly.
Return the mixture to the pan and whisk until thickened over a medium to low heat.
Remove from the heat, pour into a bowl and place over iced water to cool. As the mixture cools, add 250ml fresh orange juice.
Churn the mixture in an ice cream machine.
Once ready, spoon the ice cream into hollowed oranges, place these on a bed of ice cubes or on fresh fruit salad.
